Why the weighting matters
A naive grayscale conversion averages the three color channels equally. The result looks wrong, and the reason is physiological: the human eye contains far more receptors sensitive to green light than to red or blue. Green therefore contributes most of our sense of brightness.
Standard conversions weight the channels roughly 30% red, 59% green and 11% blue to match that sensitivity. A red apple and a green apple of similar brightness convert to noticeably different grays under the weighted formula, and to nearly identical grays under a simple average — which is exactly the flat, muddy result people complain about.
Where this becomes practical: if a grayscale conversion has flattened two important elements into the same tone, adjusting the color balance before converting will separate them.
